
Bayou Teche Brewing and Tony Chachere’s Famous Creole Cuisine have combined forces to release Gumbo Stout, a craft beer aimed at capturing the spirit of the signature Louisiana dish. Brewery founder Karlos Knott says the beer was brewed around the flavor of a chicken and sausage gumbo.
“We did it in a stout which is already a very dark and thick beer, so the two flavors kind of work together,” says Knott.
Knott says the gumbo gives the beer a roasted and smoky flavor from both the roux and barley. He says those flavors are accentuated by the salt, cayenne, and black pepper.
He says the beer was inspired by the Mexican Michelada.
“They take beer and they add tomato sauce and spices, and it’s really refreshing it’s kind of like a beer Bloody Mary and we thought what would a Cajun version be like. We’re thinking savory, salty, spicy. Gumbo on beer just seemed to be the Cajun version of that,” says Knott.
Knott says Bayou Teche is no stranger to beers based around the unique flavors of Louisiana foods, adding the different variations sell quickly.
“We did a boudin beer around back around Mardi Gras time. We did a beer named Maque Choux that was based on the Cajun dish with corn, tomatoes, and peppers. And probably the craziest a few years back we did was a beer with some Louisiana ducks,” says Knott.
Gumbo Stout will be available for a limited time at select retailers around the state.
