
Acadiana-based Bayou Teche Brewing is releasing a limited edition beer called Cajun Breakfast Stout. Brewery founder Karlos Knott says breakfast stouts that capture the flavors of bacon, maple syrup, and donuts are a growing trend among breweries, but Bayou Teche is for a different vibe.
“We thought we’d do a cajun twist and we put boudin, coffee, and cane syrup in the beer,” said Knott.
Knott says brewers utilize Steen’s cane syrup, boudin made with ground pork, rice, onion, green peppers, and Cajun spices and seasoning, as well as organic coffee from Art’s Coffee Roasters.
“It’s a local coffee here in Arnaudville, so that’s the first thing you get, you’ll get some coffee flavor, then you get the spice from the boudin. Kind of the black pepper, the red pepper, and the sage kind of on the finish and then cane syrup kind of ties it all together with some sweetness,” said Knott.
The beer will be available first at a launch party Saturday at the brewery in Arnaudville, followed by a launch across the state. Bayou Teche is no stranger to unique flavors and Knott says the consumers’ demand for new flavors never stops.
“Their favorite beer is ‘new’ and they want something new every week almost. So most of the breweries in the state, us included, are just coming up with inventive, kind of innovative ways to either brew the beer or the ingredients to add to them,” said Knott.
