
A new king of Louisiana seafood has been crowned. Chef Karlos Knott of The Cajun Saucer in Arnaudville took first place in the 18th annual Louisiana Seafood Cook-Off (LASCO), which took place at The Harbor Center in Slidell on Friday, June 27th.
Knott’s winning entry was a Roman-style pizza with butter poached Louisiana shrimp.
“It’s cooked with broccoli, cheese, and guanciale. They would top it with butter-poached and champagne-poached shrimp and a little salad on top, kind of typical Roman. They treat their pizzas like open-faced sandwiches,” Knott explained.
After being crowned the winner, Knott said seafood has been a big part of his life.
“I grew up in Cajun country and whenever we ate out, it was always seafood. And whenever there was a special event, like you know, Good Friday or a family event, it was always seafood,” Knott explained.
As the newly anointed King of Louisiana Seafood, Knott will serve as a Louisiana ambassador for seafood for the next year, and he will represent Louisiana in the 21st annual Great American Seafood Cook-Off in New Orleans on August 2nd.
