With king cake season in the rearview, it is officially seafood season.
Samantha Carroll, the executive director of the Louisiana Seafood Promotion and Marketing Board, said Lent is always a big time for the state’s seafood industry.
“Forty days is not that long, but we see the increase in the retailers and the distributors,” Carroll said. “People are cooking more seafood at home, and people are going out to eat, enjoying seafood.”
With more people eating seafood on Fridays since all other forms of meat are off-limits that day of the week, Carroll said that does tend to affect pricing.
“The seasonal surge often strengthens the market activity, and it can influence the pricing, but we don’t want that to deter anyone from enjoying seafood,” Carroll said.
As for one of Louisiana’s biggest delicacies, Carroll said to dig in on Fridays.
“The Archbishop confirmed that alligator is permitted during the lenten season and he considered it a huge part of the fish category and a magnificent creature that is important to the state of Louisiana,” Carroll said.
