Crawfish harvests have been slow to start the year with pond temperatures still pretty cool but the season looks set to pick up steam shortly.
LSU Ag Center Crawfish Specialist Mark Shirley says while it’s been slow going so far he projects we will have a strong peak crawfish season this year.
“We’re going to have a pretty good season come March and April, go ahead and start planning your crawfish boils, have a crawfish boil at the house but still keep people far away.”
On the sales side, the pandemic is still likely to keep prices low. Shirley says while the proliferation of drive-thrus really helped last year restaurant sales will likely remain down.
“You still have an issue with restaurants with limited capacity so there’s not a whole lot of crawfish dishes being served inside of restaurants.”
Despite demand that will likely be lower than a non-pandemic season Shirley projects we will still have a sizeable harvest.
“It will be somewhere in the neighborhood of 250 to 260,000 acres of production, possibly a little more.”
